- 2 sun-ripe tomatoes, diced
- 1 scallion, chopped
- 1 Tablespoon cilantro, finely chopped
- pinch, salt and pepper
- 1 whole grain cracker

In a bowl, combine the avocado, tomatoes, scallion and cilantro. Season to taste.
