Ingredients ::
- 1 can tuna
- 1 Tablespoon extra virgin olive oil, divided
- 1/4 cup grated arrot
- 1 Tablespoon goat cheese
- 4 kalamata olives, pitted and diced
- 1 scallion, chopped
- 1/2 teaspoon rosemary
- 1/2 teaspoon herbes de Provence (a mix of rosemary, marjoram, basil, bay leaf, thyme)
- 2 slices whole grain bread
- 1 cup spinach

In a bowl, mixt together the tuna, half of the olive oil, carrot, cheese, olives, scallion and seasonings.
Paint the bread lightly with the remaining olive oil.
Spread half of the tuna mixture over each slice of bread and top with spinach.
Grill until toasted.
