Ingredients ::
- 2 thawed Cornish game hens, split down the center
- 3 Tablespoons lemon juice
- 1 clove garlic, crushed
- 1/4 cup orange marmalade
- 1 Tablespoon brown coarse mustard
- 2 teaspoons ground ginger

Makes: a Dinner for 2
Marinade for an hour or overnight.
Mix all the marinade ingredients together in a bowl, and then place in a plastic Ziplock bag with the hens. Place in the refrigerator for at least an hour or overnight.
Place the hens in a 9 x 13 inch baking dish, pour the marinade over and bake uncovers in a 350 degree oven for 1 to 1-1/4 hours.
