Ingredients ::
- 1/2 cup peanut butter
- 1/2 cup butter, softened
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon baking soda
- 1 egg
- 1 teaspoon vanilla
- 1-1/4 cups regular OR quick cooking rolled oats
- 1/2 cup all purpose flour
- 1 cup semisweet chocolate pieces
Makes: 48 cookies
In a large mixing bowl, beat peanut butter and butter with an electric mixer for 30 seconds.
Add the brown sugar, sugar and baking soda.
Beat in egg and vanilla.
Beat in as much of the oats and flour as you can with the mixer. Stir in any remaining oats and flour with spoon.
Stir in chocolate pieces.
Cover; refrigerate dough for 1 hour or until easy to handle.
Shape into 1 inch balls; place 2 inches apart on an ungreased cookie sheet. Flatten slightly with a fork.
Bake in a 350 degree oven for 10 to 11 minutes or until the edges are lightly browned.
Transfer cookies to wire racks to cool.
