Ingredients ::
  • 3 Tablespoons lemon juice
  • 2 Tablespoons olive oil
  • 2 Tablespoons honey
  • 1 teaspoon dried oregano
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 4 Lbs. frozen chicken wings, thawed
  • Cucumber Sauce:
  • 1/2 cup plain yogurt
  • 1/2 cup chopped peeled cucumber
  • 1/2 cup crumbled feta cheese
  • 2 Tablespoons fresh dill
  • 1 garlic clove, minced

Prep time: Start the day before you want to serve this.

Toss wings with lemon juice, olive oil, honey, oregano, garlic and salt in a resealable bag. Refrigerate overnight.

In a blender, combine cucumber sauce ingredients; cover and process until smooth. Transfer to a small bowl, cover and refrigerate until ready to serve chicken.

Next day:

Drain and discard marinade from the chicken.

Place wings in a 15 x 10 x 1 inch pan.

Bake, uncovered at 400 degrees in oven for 35 to 40 minutes or until the juices run clear when you poke the chicken with a fork; turning once.

Serve with sauce.
