Ingredients ::
- 4 medium sweet potatoes with skins
- 2/3 cup honey
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 3 eggs
- 1-1/2 cups light cream
- 9 inch unbaked pastry crust
- 3 Tablespoons unsalted butter
- 3 Tablespoons honey
- 1/2 cup coarsely chopped walnuts
- sweetened whipped cream for garnish (optional)

Makes: 1 pie, serving 6 to 8
Preheat oven to 425 degrees.
In a large saucepan, cover sweet potatoes with water. Bring them to a boil. Reduce the heat and cook for 25 minutes or until very tender. Drain and let cool slightly.
Remove skins and mash potatoes until smooth.
Place in a food processor the potatoes, honey, cinnamon, ginger, nutmeg, eggs and cream. Process just until blended and smooth.
Pour mixture into the unbaked pastry crust. Place into the preheated oven.
Immediately reduce the oven temperature to 350 degrees and bake for 50 minutes or until almost set.
Remove from the oven and cool to room temperature on a wire rack.
In a small saucepan, melt the 3 tablespoons of butter. Add the 3 tablespoons of honey. Bring to a boil, stirring constantly. Remove from heat. Stir in the walnuts. Spoon evenly over the cooked pie.
Let stand until topping cooled, then serve with sweetened whipped cream if you want.
