Ingredients ::
  • 2 pounds beef tenderloin (or tenderloin tip or boneless beef sirloin)
  • salad oil
  • Blue Cheese Sauce:
  • 1/2 cup soft butter
  • 2 Tablespoons crumbled blue cheese
  • 2 teaspoons prepared mustard
  • 1/8 teaspoon garlic powder
  • Garlic Butter Sauce:
  • 1/2 cup soft butter
  • 1 Tablespoon snipped parsley
  • 1 clove garlic, crushed
Description ::
Makes: 4 servings

Blue Cheese Sauce makes: 1/2 cup

Garlic Butter Sauce makes: 1/2 cup

Trim fat from the beef tenderloin, cut meat into 1 inch cubes; arrange on a lettuce lined serving plate.

Prepare the blue cheese sauce: mix butter, crumbled blue cheese, prepared mustard and garlic powder in a bowl.

Prepare the garlic butter sauce: mix butter until fluffy; stir in parsley and garlic in a bowl.

Cover meat and sauces; refrigerate about 15 minutes before serving.

In a metal fondue pot, heat salad oil (2 inches deep) to 375 degrees. Note: a 1-inch bread cube will brown in 1 minute to test your oil. Transfer the pot to a source of heat at the table where you will be serving. Turn on heat and adjust heat when necessary to maintain temperature of oil.

Spear cubes of meat with fondue forks and place in hot oil. Cook until crusty on the outside, juicy and done on the inside.
Transfer meat to a dinner plate to use a fork to dip into sauces.
