Makes: 2 servings
Prep time: 4 to 8 hours before cooking
Place 2 tablespoons oil, soy sauce, oregano and garlic in glass bowl. Add skirt steak. Cover and marinate in refrigerator for 4 to 8 hours. Drain.
Heat remaining 1 tablespoon oil wok or skillet. Add beef and saute until browned, stirring frequently, for 1 to 2 minutes. Meat should be rare inside. Remove. Add onion and jalapeno to skillet and saute until onion is limp, 3 to 5 minutes. Return beef to skillet just to reheat.
Place half of the beef mixture on each of the 2 flour tortillas. Top with salsa and/or sour cream (about 1 tablespoon each). Fold tortillas and serve.
Side dish could be Spanish Rice, recipe also on this site.
