Ingredients ::
- 2 (3 oz.) packages cream cheese, softened
- 2 Tablespoons orange marmalade OR apricot preserves
- 1 teaspoon finely chopped crystallized ginger
- 1/8 teaspoon ground nutmeg
- 1/4 cup chopped almonds, toasted
- 6 (1-1/2 inch)thick slices French bread
- 4 eggs
- 1 cup milk
- 1 teaspoon vanilla
- Orange sauce (optional):
- 1/2 teaspoon finely shredded orange peel
- 1-1/4 cup orange juice
- 2 Tablespoons honey
- 4 teaspoons cornstarch

Makes: 6 servings
Prep time: the night before
Generously grease a 3 quart rectangular baking dish; set aside.
In a small bowl, beat together cream cheese, marmalade, ginger and nutmeg. Stir in almonds.
Cut a pocket in top crust of each bread slice. Divide cream cheese mixture evenly among the pockets. Place the bread slices in the prepared baking dish.
In another small bowl, beat together eggs, milk and vanilla; slowly pour mixture over the bread slices, covering all tops. Cover and chill overnight.
Bake uncovered in a 350 degree oven for 30 to 35 minutes or until golden.
Orange sauce:
In a small saucepan stir together orange sauce ingredients. Cook and stir over a medium heat until thickened and bubbly. Cook and stir 2 minutes more. Ready now to serve with toast.
