Ingredients ::
- 2-1/2 oz. unsalted butter
- 1 large onion, chopped
- 2 cloves garlic, finely chopped
- 2 celery stalks, finely chopped
- 1 green pepper, chopped
- 1 bay leaf
- 1 Tablespoon paprika
- 6 fresh tomatoes, diced
- 1 cup tomato juice
- 1 Tablespoon Worcestershire sauce
- 4 teaspoons red hot sauce
- 1-1/2 Tablespoons cornstarch
- 1/2 cup water
- 3 Lbs. peeled shrimp
Makes: 6 to 8 servings
In a pan, saute the onion, garlic, celery and pepper for about 3 minutes in butter.
Add the bay leaf, paprika, chopped tomatoes and tomato juice. Stir well and add the Worcestershire sauce and hot sauce and simmer until the vegetables are tender and the sauce has reduced by about a quarter.
Mix together in a small bowl or cup; the cornstarch and the water and then stir into the sauce.
Bring the sauce to a boil then turn down the heat and simmer for 2 minutes.
Add the shrimp and simmer for 10 more minutes until they are cooked.
Serve over rice.
