Ingredients ::
  • 2 Tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, finely chopped
  • 3 celery stalks, chopped
  • 1 green pepper, chopped
  • 2 cups diced ham
  • 2 cans chopped tomatoes with liquid
  • 4 Tablespoons tomato paste
  • 2 Tablespoons chopped fresh parsley
  • 1 bay leaf
  • 1 teaspoon thyme leaves
  • 3 Tablespoons Worcestershire sauce
  • 3 cups water
  • salt and pepper to taste
  • 10 pork sausages
  • 1 Lb. smoked sausage, sliced 1 inch thick
  • 2 cups long grain rice
Description ::
Makes: 8 to 10 servings

In a pan, saute onion, garlic, celery and green pepper in oil for 5 minutes or until soft and golden.

Add the ham and tomato paste and cook for another minute, stirring.

Then add the chopped tomatoes with liquid, the tomato paste, parsley, bay leaf, thyme, Worcestershire sauce and water. Season with salt and pepper; simmer for 15 minutes.

In a separate skillet, fry the pork sausages.

Add the pork sausages, and the smoked sausages and rice to the large pot mixture. Bring all to a boil, and then simmer for 25 minutes.
