Ingredients ::
- 1 oz. unsweetened chocolate, chopped
- 1/2 stick (1/4 cup) unsalted butter, in quarters
- 1/4 cup sugar
- 1/4 cup seedless raspberry jam
- 1 large egg
- 1/4 cup all purpose flour
- 1/8 teaspoon salt
- Garnish: Ice cream and raspberry brandy

Preheat oven to 350 degrees.
Grease and flour an 8 inch square baking pan.
Melt chocolate and butter in the top of a double boiler (water barely simmering) and stir until smooth. Remove from heat.
Whisk in sugar and jam. Whisk in the egg, flour and salt until smooth. Spread batter into the pan and bake for 12 to 15 minutes or until just set.
Cool brownies on a rack for 5 minutes.
Serve with ice cream and drizzle of raspberry brandy.
