Ingredients ::
  • 1 Tablespoon olive oil
  • 1 Lb. sirloin tip steak, cut into thin strips
  • 1 green pepper, sliced
  • 1 onion, sliced
  • 1 fajita kit
  • 2 cups shredded Dofino Jalapeno Havarti cheese(if not available, substitute with 2 cups shredded Dofino Havarti cheese and diced fresh jalapeno peppers to taste)
  • 1/2 cup frozen corn
  • 3/4 cup chunky salsa
  • sour cream

Makes: 10 Fajitas

Tip:
Remember to wear gloves when handling jalapeno peppers.

Heat oven to 375 degrees.

Heat olive oil in skillet over medium high heat. Cook beef for 4 to 5 minutes.

Add green pepper and onion. Cook for 2 minutes until vegetables are tender crisp, stirring often. Remove from heat and stir in the fajita seasoning mix, fajita sauce, 1 cup of the cheese and corn.

Spoon about 1/2 cup of the fajita mixture onto center of one tortilla. Roll up and place seam side down in a greased 13 x 9 inch baking dish.

Repeat 9 more times, fitting rolled fajitas into baking dish.

Spoon some of the salsa onto middle of each fajita. Top with the remaining cheese, cover dish with foil and bake for 15 minutes.

Remove the foil and bake 10 minutes longer or until heated through.

Serve with sour cream.
