Ingredients ::
  • 2 Tablespoons Crosse & Blackwell Capers
  • few tablespoons of chopped Crosse & Blackwell cocktail onions (optional)
  • 1 loaf French bread, diagonally sliced
  • 2 Tablespoons olive oil
  • 1 teaspoon butter
  • 4 eggs, beaten
  • 4 slices bacon, fried crisp, coarsely chopped
  • 4 sausage links, cooked, thinly sliced or chopped
  • 3/4 cup cherry tomatoes, diced
  • sharp cheddar cheese, shredded
Description ::

Makes: 4 servings

Preheat broiler.

Brush both sides of bread with olive oil and place on a large baking sheet. Toast bread on both sides.

Melt butter over medium heat, add Capers and onions to beaten eggs. Scramble eggs to desired doneness.

Divide eggs, bacon, sausage and tomatoes between all the bread slices.

The top with the cheese. (you may want to slide them under the broiler again just to melt the cheese a little - watch it so it does not burn) serve immediately.
