Ingredients ::
- 1 Lb. lean ground beef
- 1 Tablespoon oil packed sun dried tomatoes, drained and finely chopped
- 1 teaspoon finely shredded lemon OR lime peel
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup light mayonnaise dressing or salad dressing
- 2 Tablespoons fresh basil, snipped into small pieces
- 1 fresh jalapeno pepper, seeded and finely chopped
- 4 onion-flavored hamburger buns
- 1 cup lightly packed arugula OR spinach leaves

Cooking time: 12 to 16 minutes

In a medium bowl, combine the raw ground beef, tomatoes, lemon peel, salt and black pepper; mix well.
Shape into four half inch thick patties.
Grill on the rack of an uncovered grill directly over medium heat for 12 to 16 minutes or until meat is no longer pink, turning once halfway through cooking.
Meanwhile, combine the mayonnaise, basil and jalapeno pepper in a small bowl.
Toast the buns, cut side down, on the grill rack next to burgers during the last one to two minutes of grilling.
Place burgers on bottom halves of buns. Top with the mayonnaise dressing mixture and arugula. Add bun tops and serve.
