Ingredients ::
- 10 boiled, and peeled potatoes, sliced 1/4 inch thick
- 10 sliced eggs, boiled and peeled
- sliced pepperoni
- sliced fresh mushrooms
- sour cream OR yogurt
- grated Romano OR Parmesan cheese
- chopped parsley
- paprika
- pinch of oregano

In a pan, saute mushrooms. Then add a touch of sour cream or yogurt. Mix in the parsley and seasonings; set aside.
In another pan, heat sliced pepperoni to let oils and fat come out, then drain.
In a 9 x 13 inch Pyrex dish, layer in order:
potatoes
eggs
pepperoni
mushroom mixture.
Spread with a thin layer of sour cream or yogurt. Sprinkle with grated cheese.
Repeat layers as needed. For final layer, end with potatoes, sour cream or yogurt and grated cheese.
Bake at 350 degrees for 1 to 1-1/2 hours or until browned.
