Ingredients ::
- 1 large chopped onion
- several chopped garlic cloves
- sirloin tip roast, cubed
- red wine
- black pepper
- thyme
- oregano
- basil
- salt
- sweet and hot paprika
- Season to your taste

Marinate cubed roast in red wine for 1/2 hour.
Saute onion and garlic in a small amount of oil until transparent, in a pan. Drain oil and set aside.
Put meat, onion, garlic and seasonings in a small dutch oven, adding just enough water to cover meat.
Cover and cook over low heat for at least 2 hours. Keep adding red wine until the meat is tender.
Add chopped, fresh parsley and serve over pasta, potato, rice, or cubed toast.
