Ingredients ::
  • Dough:
  • 1 cup butter (OR half oleo/half butter)
  • 1/2 cup powdered sugar
  • pinch salt
  • 2 cups flour
  • Filling:
  • 4 eggs
  • 2 cups sugar
  • 5 Tablespoons flour
  • juice of 2 lemons (OR 9 Tablespoons Real Lemon juice)
  • zest from 1 lemon - optional

Dough:

Cream butter, add powdered sugar, salt and flour, in a bowl and mix well.

Grease a 10 x 13 inch jelly roll pan or sided cookie sheet. Pat out dough making sure to press up sides of the pan. Bake at 350 degrees for 18 minutes.

Filling:

In a bowl, beat eggs and sugar well, add 5 Tablespoons flour and lemon juice and zest if using. Pour over the baked bottom layer and continue baking at 325 degrees for 30 to 35 minutes or until top is slightly browned.

When cool, sprinkle with more powdered sugar and cut into squares.
