Ingredients ::
  • 2 cups (16 oz.) cottage cheese
  • 3 eggs, beaten
  • 3 packages frozen spinach, thawed and drained
  • 1-1/2 cups shredded cheddar cheese dash nutmeg
  • 1/2 teaspoon salt

Makes: 6 to 8 servings

In a large mixing bowl, combine the cottage cheese and eggs. Add spinach, 1-1/4 cups cheddar cheese, salt and nutmeg. Mix.

Spoon into a greased 12 x 7-1/2 x 2 inch pan.

Bake at 350 degrees until set, about 45 minutes.

Remove from oven, sprinkle with remaining cheddar cheese.

Let stand 5 minutes before serving.
