Ingredients ::
  • 1 Lb. summer squash, cut into 1/2 inch slices
  • 1/2 Lb. zucchini, sliced
  • 1 medium onion, sliced
  • 1 medium green pepper, julienned
  • 4 teaspoons butter
  • 3 medium tomatoes, peeled and quartered
  • 3/4 teaspoon salt
  • 1/2 teaspoon ginger

Makes: 9 servings

In a large pan, saute squash, zucchini, onion and green pepper for 1 minute in butter.

Cover and cook over medium heat for 3 minutes.

Add tomatoes, salt and ginger. Cover and cook 2 to 30 minutes more.
