Ingredients ::
  • 4 Tablespoons (1/2 stick) butter
  • 4 cups (2 to 3) onions, thinly sliced
  • 2 cups sliced mushrooms
  • 1-1/2 Tablespoons flour
  • 6 cups beef broth (not bullion)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup brandy
  • 1/2 teaspoon Kitchen Bouquet seasoning
  • shredded Parmesan cheese for garnish

Makes: 6 servings

In a soup pot, melt butter and add onions, stirring constantly. Cook for 10 to 15 minutes or until soft.

Then add mushrooms, cook 2 minutes and sprinkle with flour; stir.

Add 2 cups of the broth and continue to stir until mixture is thickened.

Add remaining broth, stir in salt, pepper and brandy. Bring to a boil.

Cover and simmer for 45 minutes.

Add Kitchen Bouquet, taste and adjust seasonings if desired.

Serve with 1 Tablespoon shredded Parmesan cheese per bowl.
