Ingredients ::
- 2 Lbs. Yukon Gold potatoes
- chicken stock
- salt and pepper
- freshly grated nutmeg
- breadcrumbs
- Parmesan cheese
- clarified butter
- butter for greasing pan
- Note:
- clarified butter is butter that has had milk solids and water removed. It's very easy to make. Melt butter slowly. Let it sit for a bit to separate. Skim off foam that rises to the top, and gently pour butter off of the milk solids, which have settled to the bottom. A stick (8 Tablespoons) of butter, will produce about 6 Tablespoons of clarified butter.
Makes: 1 sheet pan

Generously butter a 15 x 10 no stick sheet pan with sides.
Peel potatoes and slice very thin. Spread in buttered pan. Cover with chicken stock. Season with salt, pepper and nutmeg. Cover tightly with a double layer of tin foil.
Bake at 375 degrees for 45 minutes to 1 hour, or until liquid is absorbed and potatoes are tender. Uncover, sprinkle with equal amounts mixed Parmesan cheese and breadcrumbs. Drizzle generously with the clarified butter.
Broil until golden brown. Watch carefully as it will burn quickly.
Serve and enjoy.
