Ingredients ::
  • 2 Tablespoons butter or margarine, melted
  • 1/2 cup milk
  • 4 slices bread, torn into pieces
  • 2 cans (16 oz. each) red salmon, drained and flaked
  • 2 eggs, separated
  • 3 Tablespoons lemon juice
  • 2 teaspoons minced onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • paprika
Description ::
Makes: 4 to 6 servings

Tip:
This dish has a crusty outside, moist and tender within. For a more delicate souffle crust, place the casserole dish to bake within a pan of hot water before baking it.

Mix butter, milk and bread; stir in salmon, egg yolks, lemon juice, onion, salt and pepper.

In another bowl, beat egg whites until stiff; then fold into the salmon mixture.

Pour into a greased 1-1/2 quart casserole dish. Sprinkle with paprika.

Bake uncovered 1 hour.
