Ingredients ::
  • 2 Lbs. zucchini (about 8 small ones)
  • 2 eggs
  • 2 cups creamed cottage cheese
  • 3/4 cup uncooked instant rice
  • 1/2 cup chopped onion
  • 2 Tablespoons snipped parsley
  • 1-1/2 teaspoons marjoram
  • 3/4 teaspoon salt
  • a few drops of red pepper sauce
  • 3/4 cup grated Parmesan cheese
  • 1 Lb. Canadian style bacon, cut into 16 slices
Description ::
Makes: 6 servings

Cut unpared zucchini into 1/2 inch slices. Cook covered in 1 inch boiling salted water for 5 minutes; then drain.

Beat eggs slightly in a bowl; stir in remaining ingredients except for the Parmesan cheese and bacon.

Arrange half the zucchini in ungreased baking dish, 11-1/2 x 7-1/2 x 1-1/2 inches.

Top with half of the rice mixture; then repeat with zucchini and the rest of the rice mixture.

Sprinkle with Parmesan cheese; arrange the bacon on top.

Bake uncovered for 1 hour.

Serve hot.
