Ingredients ::
- 6 medium sized tart cooking apples
- 1 Tablespoon lemon juice
- 1/2 cup raisins
- 1 cup sugar
- 1-1/2 Tablespoons all purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Buttery Pastry
- Whipped cream (optional)
- Buttery Pastry:
- 1-1/4 cups all purpose flour
- 2 Tablespoons powdered sugar
- 6 Tablespoons firm butter or margarine
- 1 egg yolk
- 1/2 teaspoon vanilla
- 1 Tablespoon water
Makes: 1 tart (serves 6 to 8)
Prep time: 35 minutes
Baking time: 40 to 50 minutes
Buttery Pastry:
Stir together all purpose flour and powdered sugar. Cut in butter until mixture forms coarse crumbs. Beat egg yolk with vanilla and water. Gradually stir into flour mixture, stirring with a fork until pastry clings together. Form into a ball. Roll out on a floured board or pastry cloth to a circle, about 13 inches in diameter.
Tip:
Pastry can be pressed into pan, omitting step of rolling out. Flatten pastry with your hands, then press it firmly over sides and bottom of pan.

Peel, core, and slice apples; mix with lemon juice and raisins. Combine with a mixture of sugar, flour, cinnamon, and nutmeg.
Line an 11 inch removable bottom tart pan with pastry, trimming edge flush with top edge of pan. Spread apple mixture evenly in pastry shell.
Bake on lowest rack at 400 degree oven until pastry is well browned and apples are tinged with brown and tender, 40 to 50 minutes. Cool slightly. Then remove pan sides. Serve with whipped cream, if you wish.
