Ingredients ::
  • 3 cups self rising flour
  • 3 Tablespoons granulated sugar
  • 1 Tablespoon dried Italian herbs OR (1 teaspoon of each: oregano, basil, thyme)
  • 12 oz. beer at room temperature
  • 1/2 cup Parmesan cheese, grated
  • 1 Tablespoon shortening
  • 3 Tablespoons cornmeal
  • 2 Tablespoons soft butter or margarine
Description ::
Makes - 1 large loaf

Prep time: 30 minutes

Baking time: 1 hour

Tip: Bread may be frozen, wrapped in an airtight package, for three months.

In a large mixing bowl, combine the flour, sugar, cheese and dried herbs. Mix well to combine.

Stir in the room temperature beer to produce a stiff batter.

Preheat oven to 325 degrees.

Grease a loaf-pan with the shortening, and sprinkle bottom and sides with the cornmeal.

Turn batter into pan. Bake at 325 for about 65 minutes.

Brush baked loaf with softened butter, and sprinkle with additional cornmeal if desired.

Turn out and cool on rack.
