Ingredients ::
- 1 cup coffee brew
- 1 cup firmly packed brown sugar
- 1/2 teaspoon vanilla
- 1 Tablespoon brandy (optional)
- 4 large scoops coffee ice cream
- 1/2 cup whipping cream, beaten until stiff
- Crushed Almond Praline:
- 1/3 cup sugar
- 2 Tablespoons whole unblanched almonds
Makes: 4 servings
Crushed Almond Praline makes: 1/2 cup
Prep time: 20 minutes
Cooking time: 10 minutes
Almond Praline:
In a small heavy frying pan heat together 1/3 cup sugar and 2 tablespoons whole unblanched almonds over moderately high heat until sugar melts and turns a rich amber color. Tip and tilt pan so sugar melts evenly. Remove from heat; pour onto well buttered waxed paper on a baking sheet. Let stand until cool and firm. Break praline into pieces. Place in a plastic bag, and crush coarsely with a mallet.
Sundaes:
Mix coffee and brown sugar in a medium saucepan. Bring to a full rolling boil. Continue cooking until mixture begins to thicken and becomes syrupy, 10 to 15 minutes. Remove from heat. Mix in vanilla and brandy (if used). Cool to room temperature.
Pour syrup over ice cream in 4 sundae dishes, reserving a little. Dollop or pipe whipped cream over each serving. Drizzle with remaining syrup. Sprinkle with crushed Almond Praline. Serve immediately.
