Ingredients ::
- 1/2 cup corn oil
- 3/4 cup sugar
- 1 3/4 cups unsifted flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup shredded carrot
- 2 eggs
- 1/2 cup chopped nuts
Carrot Nut Bread
Grease 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan.
In large bowl, stir together corn oil and sugar.
Stir together flour, baking powder, salt and cinnamon; stir into corn oil mixture.
Stir in carrot.
Add eggs, 1 at a time, beating well after each addition.
Stir in nuts.
Turn into prepared pan.
Bake in 350 degree oven 55 to 60 minutes or until cake tester inserted in center comes out clean.
