Ingredients ::
  • 1 large (12 oz.) cucumber
  • 1 small onion
  • 3 Tablespoons vinegar
  • 1 Tablespoon sugar
  • 1 Tablespoon cooking oil
  • 1/4 teaspoon dried dill weed OR dried mint, crushed
  • 1/8 teaspoon salt
  • hot pepper sauce
Description ::
Makes: 1-1/4 cups

Prep time: 8 hours to refrigerate

Slice cucumbers in half lengthwise. Scoop out seeds and discard.

Using a food processor or Food grinder with a coarse blade, process or grind cucumber and onion or finely chop by hand.

Drain. Stir in vinegar, sugar, oil and dill weed or mint, salt and a few drops of hot sauce, to taste.

Chill for 8 hours before serving. Cover and store in refrigerator.
