Ingredients ::
  • 1/4 cup instant coffee
  • 2 cups boiling water
  • 1/2 cup sugar (more or less to taste)
  • 2 teaspoons vanilla
  • 1 cup thawed Cool Whip
  • cherries for garnish
Description ::
A cool treat for coffee lovers.

Place instant coffee in a serving pot. Stir in boiling water and let steep for 5 minutes. Dissolve sugar in hot coffee.

Now let the coffee cool. Add vanilla. Pour into shallow pan. Freeze until almost firm.

Spoon into chilled bowl and beat well. Return to shallow pan. Freeze until it is of a sherbet consistency.

Just before serving time, alternately layer coffee mixture with whipped topping into parfait glasses beginning and ending with coffee mixture.

Top with Cool Whip and a cherry.
