Ingredients ::
- 2 cups buttermilk baking mix
- 2 eggs
- 1 cup milk
- 1/2 cup pumpkin
- 1/4 cup water
Makes: depends on the size of the pancakes you make
Mix the buttermilk baking mix, eggs and milk together in a bowl.
Gently stir in the pumpkin.
Add the water and blend.
Cook on a hot griddle until pancakes are dry around the edges. Flip, then cook the other side until brown.
The batter can be easily poured into holiday shapes with a spoon, or try metal cookie cutters with handles (sprayed with oil).
Serve with any pancake topping.
