Ingredients ::
- 2 Lbs. sweet potatoes
- 1/2 cup heavy cream
- 1/4 cup whiskey
- 3 Tablespoons light brown sugar
- 2 Tablespoons molasses
- 1 teaspoon kosher salt
Servings: unknown
Preheat oven to 350 degrees.
Place the potatoes on a foil lined baking sheet. Bake until tender and starting to ooze sugary syrup; about 1 hour and 15 minutes, depending on their size.
Remove them from the oven and let sit until cool enought to handle.
Cut a slit down each potato and scoop the flesh into a large mixer bowl. Discard the skins.
Now add the cream, whiskey, sugar, molasses, salt and beat on a high speed with mixer; to the texture you like.
Serve hot. (you may need to rewarm them in the microwave, or return to the oven to keep warm)
