Ingredients ::
- 1-1/4 pounds potatoes, peeled and grated
- 2 cups chopped onions
- 2 large eggs
- 6 Tablespoons flour
- salt and pepper to taste
- 1/2 cup (about) cooking oil
- 8 Tablespoons sour cream (optional)
- Note: if you want to make this a rich dish, on top of the sour cream top with 1 teaspoon of caviar.
Makes: 4 large pancakes (the size of the pan used)
In bowl, mix together potatoes, onions, eggs, flour, salt and pepper.
In 9-inch omelet pan or skillet over medium heat, heat enough oil to coat pan. Add 1/4 of the potato mixture, spreading in pan evenly. Cook 5 minutes or until bottom is brown. Slide onto plate. Add 1 Tablespoon oil to pan. Return pancake to pan and brown on second side for 5 minutes. Keep warm in low (150 degree oven) while using same procedure to cook remaining pancakes.
Serve each pancake topped with 2 Tablespoons of sour cream.

Note: if desired, pancakes may be topped with applesauce seasoned to taste with cinnamon. Use 2 Tablespoons cinnamon applesauce per pancake.
