Ingredients ::
- 1/2 cup butter
- 1 cup sugar
- 8 eggs, separated
- 1/4 teaspoon cream of tartar
- 3 cups cake flour
- 4 cups walnuts, chopped medium-fine
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/4 cup coarsely chopped walnuts
- Syrup:
- 1 cup sugar
- 1/2 cup water
- 1 cup honey
- 1/2 teaspoon ground cinnamon
- 1 teaspoon lemon juice

Makes: about 30 servings
Note: If 10-1/2 x 15-1/2 x 1 inch pan is substituted, increase depth by placing collar inside pan edges.
In mixing bowl, cream butter and sugar well. Add egg yolks and beat with electric mixer until light.
In another bowl (NOT plastic), beat egg whites and cream of tartar until stiff. Fold carefully into egg yolk mixture.
Combine cake flour, finely chopped walnuts, cinnamon and baking powder. Fold into egg mixture. Pour into a greased 11 x 15 x 2 inch backing pan. Sprinkle with coarsely chopped walnuts.
Bake at 350 degrees for 1/2 hour or until cake tests done. Cool in pan.
For the syrup, boil sugar and water about 10 minutes, in a pan. Then stir in the honey, cinnamon and lemon juice. Pour hot syrup over top and let stand at least 2 hours.
To serve, cut into diamond shapes, about 1-1/2 inches across, and remove pieces from pan with a spatula.
