Ingredients ::
  • 1 eggplant
  • water
  • salt
  • pepper
  • 2 to 3 egg yolks, depending on size of eggplant
  • 1 cup grated bread crumbs (about)
  • butter and lard

Prep time: 2-1/2 hours before serving

Slice eggplant about 1 inch thick, but do not peel. Let soak 1 or 2 hours in enough water to cover. Sprinkle liberally with salt while it soaks. When soaked, removed eggplant, dry and season with pepper.

Beat egg yolks well. Dip eggplant slices into yolks, then into dish of bread crumbs. Saute eggplant in preheated skillet in mixture of butter and lard. Turn and cook until eggplant slices are nicely browned.
