Ingredients ::
- 2 cups coarsely chopped walnuts
- 1 cup golden raisins
- 1 package (6 oz.) dried apricots, cut up (1-1/2 cups)
- 1 cup pitted dates, cut up
- 1-1/2 cups biscuit mix
- 1 cup sugar
- 4 eggs, slightly beaten
- 2 teaspoons vanilla extract
Makes 7 individual cakes, if you use 7 loaf pans 4-1/2 x 2-1/2 x 1-1/2 inches each.
Grease 7 individual loaf pans. Line with foil; grease the foil.
In large mixing bowl, combine biscuit mix, sugar, eggs and vanilla, stirring until blended. Blend fruits and batter well. Spoon batter into prepared pans, dividing evenly; do not fill pans more then 1/2 full.
Bake at 300 degrees for 45 to 50 minutes. Remove from pans and remove foil. Cool on cake rack.
