Ingredients ::
- 1 quart tomato juice (or cooked, sieved fresh tomatoes)
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 small onion, grated or finely chopped
- 3 whole cloves for dash ground cloves
- 2 bay leaves
- 1 teaspoon sugar
- chopped parsley to taste
- 1/2 teaspoon baking soda
- 1/4 cup (1/2 stick) butter
- 1/4 cup flour
- 4 cups milk
Makes about 2 quarts, or 8 servings.
Homemade tomato soup would go great with a grilled cheese sandwich, or a tuna melt.
In a large saucepan, cook juice, sold, pepper, onion, cloves, bay leaves, sugar and parsley until onion is soft, about 10 minutes.
Strain to remove spices.
Return to saucepan over low heat. Add baking soda to hot tomato mixture; stir.
Meanwhile, in another large pan, melt butter over low heat. Blend in flour to form smooth paste. Gradually stir in milk and heat about 10 minutes, stirring constantly, until thickened and smooth.
Slowly stir tomato mixture into the white sauce. Keep over very low heat, stirring occasionally, until serving.
