Ingredients ::
- 2 pounds carrots -- sliced
- 1 medium onion -- chopped
- 1 medium green pepper -- chopped
- 1 cup sugar
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 1 teaspoon black pepper
- 1/2 cup corn oil
- 3/4 cup white vinegar
- 1 teaspoon worcestershire sauce
- 1 can (8 oz.) tomato sauce
Carrot Relish
Salt carrots and cook until done; set aside.
Chop onion and green pepper and set aside.
Mix sugar, salt, dry mustard and pepper; stir well.
Add corn oil, vinegar, worcestershire sauce and tomato sauce; mix well.
Combine carrots, onions and peppers. Pour liquid mixture over relish and marinate overnight.
