Ingredients ::
- 4 egg whites
- 1 Tablespoon chives
- 1/2 Tablespoon flat-leaf parsley leaves
- 1 teaspoon tarragon leaves
- olive oil spray
- 1 oz. crumbled goat cheese (about 1/4 cup)
- salt and fresh black pepper, to taste
- Tip:
- You can use dried ingredients in a pinch instead of fresh, but since dried herbs pack more flavor per tablespoon, decrease the amount by a third.
Makes one serving
Mix the egg whites, chives, parsley, and tarragon in a medium bowl. Beat lightly with a fork until combined.
Spray a small nonstick frying pan and place over medium-high heat. Add egg mixture. Cook about 5 minutes or until set. Sprinkle egg with goat cheese, carefully fold in half, and cook through. Omelet should be very lightly browned.
Serve immediately.
