Ingredients ::
- 4 cups mixed greens *, washed and dried well
- 4 medium strawberries, sliced
- 3 medium button mushrooms, sliced
- 1 oz. (about 1/4 cup) crumbled, reduced-fat feta cheese
- 1 Tablespoon chopped walnuts
- 2 Tablespoons light raspberry vinaigrette
- On the side serve with:
- 6-oz. container fat-free, aspartame-sweetened yogurt, any flavor
- * Tip In a pinch, spinach can substitute for mixed greens, but don't use iceberg lettuce. Its high water content makes it one of the least nutritious vegetables.
Makes one serving
Combine all ingredients except vinaigrette.
Pour dressing when serving.
Serve immediately with yogurt on the side.
