Ingredients ::
- 3-1/2 oz. cooked chicken breast, torn into thick shreds
- 1-1/2 Tablespoons chopped, seeded cucumber (with peel)
- 1 Tablespoon chopped mango
- 1 Tablespoon chopped red onion
- 1 Tablespoon light mayonnaise
- 1/2 teaspoon tandoori paste *
- 1/2 teaspoon fresh-squeezed lime juice
- 2 slices whole-wheat or whole-grain bread
- * Tip Tandoori paste is available in most supermarkets that have ethnic-food sections.
Makes one serving
In a medium bowl, mix all ingredients except bread until well combined. Place salad between bread slices.
