Ingredients ::
- 1/2 cup unbleached all-purpose flour
1/4 cup cocoa powder
1/4 teaspoon baking soda
1/8 teaspoon salt - 1/3 cup light butter, softened
1/2 cup sugar - 1 egg white
1/2 teaspoon vanilla extract
6 oz. dark chocolate (60% cocoa), chopped - 1/4 cup dry roasted, unsalted peanuts
Makes a dozen cookies.
Per cookie:
169 calories, 3 grams protein, 21 grams carbohydrates. 10 grams fat (5 grams saturated), 2 grams fiber, 87 mg sodium
Preheat oven to 350°.
In a medium bowl, mix flour, cocoa, baking soda, and salt.
Beat butter and sugar in a large bowl until creamy. Beat in the egg and vanilla. Gradually add flour mixture and beat it just until combined. Beat in the chocolate and nuts.
Measure out 2 tablespoons of dough and drop onto ungreased cookie sheet, with 2 to 3 inches between each cookie. Bake for 12 minutes or until just set, being careful not to overcook.
Cool for about 5 minutes. Remove from sheet to a wire rack. Cool completely
