Ingredients ::
  • 1 (1-Lb.) eggplant
  • 1/2 teaspoon dried oregano
  • salt and pepper, to taste
  • 3 medium plum tomatoes, seeded and chopped
  • 1 whole small green onion, minced
  • 1 medium clove garlic, minced
  • 3 Tablespoons goat cheese (log, not crumbled)
  • olive oil spray
Description ::
Makes three two-roll servings.

Per serving:
105 calories, 5 grams protein, 11 carbohydrates, 5 grams fat
(3 grams saturated), 4 grams fiber, 80 mg sodium


Preheat broiler. Cut eggplant lengthwise into 1/4-inch-thick slices. (Discard two outer slices.) Lightly spray both sides of each inner slice, then season with oregano, salt, and pepper. Place slices on rack of a broiler pan.

Broil eggplant 2 minutes per side or until tender and lightly golden.

Meanwhile, in a small bowl, mix the tomatoes, onion, and garlic. Spread each slice with 1/2 tablespoon goat cheese. Top each evenly with the tomato mixture and roll jelly-roll fashion, starting at the narrow end. Serve immediately.
