Ingredients ::
- 1 Tablespoon tomato juice
- 2 teaspoons honey
- 2 teaspoons red wine vinegar
- 1/8 to 1/4 teaspoon chipotle chili pepper (find it in the spice aisle), to taste
- 2 teaspoons extra-virgin olive oil
- 1 Tablespoon finely chopped red onion
- 4 cups torn romaine lettuce leaves
- salt and pepper, to taste
- 1 oz. crumbled part-skim queso fresco (Mexican cheese)
Makes two side-dish or starter salads.
Per salad:
114 calories, 4 grams protein, 13 grams carbohydrates, 6 grams fat (1 gram saturated), 2 grams fiber, 46 mg sodium
In a small bowl, whisk together juice, honey, vinegar, and 1/8 teaspoon chipotle.
Gradually whisk in the oil. Mix in the onion.
Add the romaine to a large bowl and toss with dressing. Season with salt, pepper, and an additional 1/8 teaspoon chipotle if desired.
Divide between two plates and sprinkle half of the cheese over each.
