Ingredients ::
- 1 cup baby spinach, chopped
- 1 cup mixed field greens
- 4-5 medium strawberries, quartered
- 2 Tablespoons sliced fennel
- 1/4 cup sliced green onion tops
- 1/3 cup canned salmon, well drained
- 1-1/2 Tablespoons walnuts, chopped

- Dressing: mix together
- 1 teaspoon honey
- 1 teaspoon lemon juice
- 2 teaspoon olive oil
- 1/8 teaspoon black pepper (or 3 twists fresh ground)
When stress goes up, vitamin C levels plummet. Half a cup of strawberries out-powers most citrus fruits on the vitamin C front. B vitamins from a mix of dark, leafy greens help keep your brain manufacturing feel-good hormones like serotonin and dopamine. The omega-3 fatty acids found in salmon and walnuts also have a soothing effect; a study published in Diabetes and Metabolism found that people who consumed fish oils regularly had significantly reduced reactions to stress compared to those who didn't.
