Ingredients ::
  • 2 cups mixed field greens
  • 2 Tablespoons cilantro, diced
  • 1/2 cup canned sweet corn, well drained
  • 1/3 cup grape tomatoes
  • 1/3 cup edamame, shelled
  • 1/3 cup precooked chicken breast (such as Louis Rich), diced

  • Dressing: mix together
  • 2 teaspoons orange juice
  • 2 teaspoons olive oil
  • 1/8 teaspoon black pepper (or 3 twists fresh ground)

Aren't all salads inherently diet foods? Not if they come covered in crispy fried chicken with croutons and Caesar dressing, like McDonald's Crispy Chicken Cobb salad. It has 100 more calories than a Quarter Pounder.

To get the waistline you want and a salad that satisfies, boost
the flavor instead of the high-calorie indulgences. Tweak the usual three-oils-to-one-acid vinaigrette mixture with two oils to two acids; orange juice will pepper your salad with citrus tang.

Next add more flavor to the greens by mixing in a fresh herb like cilantro. Then pack the salad full of lean protein like edamame and roasted chicken. The protein will also help you feel full.
