Ingredients ::
- 1 cup baby spinach, chopped
- 1 cup Romaine lettuce, chopped
- 1/3 cup garbanzo beans, rinsed and drained
- 2 Tablespoons pine nuts
- 2 Tablespoons sliced roasted red pepper
- 1/3 cup grape tomatoes, halved
- 1 strip of precooked microwavable bacon (such as Oscar Mayer), diced

- Dressing: mix together
- 1 teaspoon tomato paste
- 1 teaspoon apple cider vinegar
- 2 teaspoon sunflower oil
Here's a practical solution: Alpha tocopherol, aka vitamin E, has been linked to improved moods. In an Australian study this year (2005), people with lower blood levels of E were more likely to be depressed than those with higher levels. Pine nuts, red pepper, tomatoes, and tomato paste help raise it, and sunflower oil has more E than any other oil. Folate helps your neurotransmitters work, and beans and dark leafy greens are two top sources. As for the bacon, well, it's one of life's pleasures, so just enjoy. Besides, one strip of tasty, crispy pork fat won't kill you, especially when it's mixed in with all of these so-healthy-it-hurts vegetables.
