Ingredients ::
- 2 cups mixed field greens
- 1/2 cup cantaloupe, diced
- 4-5 medium figs, quartered
- 2 Tablespoons red onion, diced
- 1 Tablespoon Parmesan cheese, grated
- 3 slices of smoked deli ham, sliced

- Dressing:
- 1 teaspoon balsamic vinegar
- 3 teaspoons olive oil
- 1/8 teaspoon black pepper (or 3 twists fresh ground)
- all mixed together
If you're feeling run down, and you need more fuel—that is, more calories—to get back your get-up-and-go. So this is not the time for a lightweight, low-cal lunch. Sweet cantaloupe gives your body quick-release fructose (sugar), while the high-fiber, slow-burning carbohydrates from the figs and
the filling protein in the cheese and ham will see you through.
Makes one serving: 410 calories, 14grams protein, 56 grams carbohydrates (9 gram fiber), 18 gram fat (3.5 gram saturated), 700 mg sodium
Toss all in a bowl or lay out on a plate and serve with dressing.
